WHAT’S WRONG WITH NATURAL MAYONNAISE? Oxidation is the problem. Other natural mayonnaises are rancid because they are made with poly-unsaturated oils (like avocado, soybean, canola, or grapeseed).
Oxidized mayonnaise has awful rancid flavors, causes inflammation and is bad for your health.
Conventional mayonnaises (like Hellmann’s and Dukes) use the synthetic preservative EDTA to prevent oxidation. But discerning natural foods consumers avoid EDTA. EDTA is banned by Whole Foods and other natural grocers.
Coconaise is different. Coconaise solves the oxidation problem by using oils naturally resistant to oxidation, like coconut oil and medium-chain triglyceride (MCT) oil. Coconaise has fresh flavor like homemade mayonnaise, without the EDTA. And Coconaise contains healthy MCT fats (4 grams per 1 tablespoon serving).

Coconaise has TWO expiration dates, depending on storage temperature (40F and 75F). Both are printed on the jar. Coconaise is continuously refrigerated starting on the day of manufacture, so the latter date is the relevant expiration date. Coconaise is not refrigerated during shipping; this brief exposure to warmer temperatures does not affect product freshness.
